Open Settings, tap the Bikes section, and choose Restore Purchases. Your multi-bike unlock is tied to your Apple Account, so it restores on any device signed in with the same account.

No. Strava keeps your mileage up to date automatically, but you can add bikes and log rides by hand instead.

Your data lives on your device. Delete an individual bike from its Edit screen, or use Erase All Data and Settings in Settings to remove everything. Deleting the app also removes its data.
